One of my fondest memories of Chile is the memory of my Mamita cooking delicious Latin dishes for our whole family.  Who would ever think food could bring back so many beautiful memories.  This is what tamales and humitas do for so many people, it brings them back to a time and place they cherish in their minds and hearts.  I have been cooking now for about  20 years.  I started as a dishwasher and worked my way up to chef’s apprentice and years later became an executive chef.  Eight years ago I opened Empanada Company with the hope that I can make people feel like they are back home eating tamales, empanadas and, churros with their families.

Cristian will be preparing a Chilean Paella Tamal on a saffron infused quinoa masa.
A nouveau tamale with a fusion twist.  Combining South American tamale with Paella from Spain, all wrapped up in a banana leaf.
A combination of quinoa and corn masa infused with saffron stuffed with tender braised beef short rib, smoked chorizo sausage, stewed chicken thighs and tiger shrimp.
